Ingredients
- At least 9 lbs Boston Butt. Try not to get too small because they dry out. Costco sells two so you want to get about 18+ pounds.
- Coat with Koshar Salt and BBQ Seasoning
- Coat with Mustard
- Add apple cider vinegar to bag
- Marinade two nights before cooking
- When I bought two butts at Costco, I made both bags and froze one. The frozen one was great two months later.
Steps
- To eat at 7pm, you have to put the butt on the smoker at 5.30am. I start out at 180 degrees and bump the temperature to 220 after about four hours. When the internal temp hits 160 degrees, I pull it off the smoker. I wrap in tin foil after I coated the butt with brown sugar and honey. I also put a ½ cup of apple cider (not vinegar). Put in oven at 350 degrees. Make sure your meater is charged up. Make sure the internal temp hits at least 200 degrees (zac lets his go as far as 210). Even though meater tells me to pull it off sooner, I wait until it hits 200 degrees in the oven (VERY IMPORTANT) Hopefully you still have two hours to let it rest before dinner. It will still be hot and you don’t have to worry.
