Cook Manicotti shells according to box. Brown Italian sausage with chopped onion and garlic. Drain any fat and let cool. Squeeze all water out of package of chopped spinach.

Stuff Manicotti Shells with Italian Mixture

Ingredients

  • Manicotti shells
  • 1 package of Italian sausage hot or mild. (half package for recipe)
  • 1 onion
  • 1 large clove of garlic
  • 1 box of frozen chopped spinach
  • 1 cup ricotta
  • 1 cup mozzarella
  • 1 egg
  • Marinara sauce
  • Mozzarella Cheese
  • Parmesan cheese

Steps

  1. Cook Manicotti shells according to box. Brown Italian sausage with chopped onion and garlic. Drain any fat and let cool. Squeeze all water out of package of chopped spinach.
  2. In a bowl, mix sausage mixture, chopped spinach, egg, ricotta, and mozzarella. Sprinkle Parmesan cheese in and continue to mix well (use hands). Take a Pyrex dish and spray with pam. Stuff shells with sausage mixture. Cover with marinara sauce. Grate either fresh asiago or Parmesan cheese over the top. Cover pan with tin foil and bake in oven at 350 degrees for about 40 minutes or until you see bubbling. Take foil off and add Mozzarella Cheese and cook for about 10 minutes.
  3. Note: I put a lot of manicotti in one dish and after 40 minutes it wasn’t close. I ended up putting mozzarella and putting it on high broil to finish. Might want to bake longer covered next time.
